I was a vegetarian for a long time. Then cheeseburgers and Philly Cheese Steaks broke me. I still do enjoy eating certain kinds of meat, but I am getting back to eating healthier and using less meat while cooking for my family.
Yesterday, I revisited this AMAZE-BALLS recipe that I tweaked from Vegetarian Times quite a ways back...like 10 or 12 years.
This is so delicious, satisfying, and hearty and I promise, you will not miss the meat at all. The flavors are deep and you will swear it was made with chicken broth. But hey, if you want to add some chicken, toss it in!
