Vegetarian Pot Pie {or add the chicken if you want}

I was a vegetarian for a long time.  Then cheeseburgers and Philly Cheese Steaks broke me. I still do enjoy eating certain kinds of meat, but I am getting back to eating healthier and using less meat while cooking for my family.

Yesterday, I revisited this AMAZE-BALLS recipe that I tweaked  from Vegetarian Times quite a ways 10 or 12 years.

This is so delicious, satisfying, and hearty and I promise, you will not miss the meat at all. The flavors are deep and you will swear it was made with chicken broth. But hey, if you want to add some chicken, toss it in!

I hope you give it a try, even if you aren't a vegetarian, this is a great winter option for Meatless Mondays!

I promise you will adore it and your family will be satisfied!

  1. Pretty! This has been an extremely wonderful post.

    Many thanks for providing these details.

  2. Just found this through Pinterest and made it for my husband. He think it is the best he has ever had! Thanks so much!

  3. Really good. Makes a tasty gravy. I added two cloves minced garlic, and one cup chopped mushrooms. I also substituted melted coconut oil for the vegetable oil (I no longer use vegetable oil). A definite keeper. Tip: Place your dish (I used a casserole dish) on a baking sheet in case your pie bubbles over.

    • Barb, I love the addition of more garlic-I can never have enough of that. I am also getting away from vegetable oil. It didn’t give it a coconut flavor at all? I will totally try that next time-thanks!
