I was on a mission for this one, folks. I spent all day in the kitchen and it was TO-TALLY worth it.
This recipe makes a BIG batch of healthy and delicious bolognese sauce and has 1 lb of ground beef. But next time I am doing meatless. The veggies made this sauce so hearty that it definitely didn't need the meat I don't think it would be missed at all.

The hardest part was lugging my food processor down from the shelf above my kitchen cabinets.
Pureeing the veggies in the food processor gave the sauce a great thick consistency.
Don't skimp on the veggies either, they make this sauce ridiculously vitamin rich!
My kids had no idea there were some many vegetables in there and
adding the wine early lets all the alcohol cook off while the sauce still retains the deep flavor.
I am making another batch this weekend after visiting the farmer's market.
i am definitely going to double the recipe and freeze a bunch. Might as well make it worth my while after all that work lugging down the food processor and everything!
