COOL WHIP Whipped Topping is one of my favorite things. I seriously love it and eat it straight out of the tub (just sometimes....don't judge!).
I almost always have COOL WHIP in my freezer for emergencies. So, when my husband informed me that we were supposed to be bringing a fruit tray to a friend's birthday party ....in 2 hours....it became an emergency. Now, I could have just put fruit on a tray, but I wanted to make this a little extra special and I knew just what to do!
I ran to the freezer and grabbed my giant tub of COOL WHIP (yeah, I always buy the giant tub:), a package of cream cheese, and a bag of confectioners sugar.
I pulled out my hand held mixer and the kids came running like Pavlov's dogs! They know every time that little mixer comes out of the pantry it means something yummy is about to happen.

I have eaten fruit dip before, but I never actually made it myself. I know I like COOL WHIP, cream cheese, and sugar, so I figured it would turn out ok. I can't give you an exact recipe because I was in a rush (emergency remember) and just started spooning everything into a giant bowl willy nilly. We mixed and tasted, and added more sugar, and mixed and tasted and added more COOL WHIP until we were happy with the results.
We accidentally made way too much and boy the kids sure were upset about that-hee hee
While we were creating this easy and delicious COOL WHIP fruit dip I sent my husband to the store for everything else we needed. We used strawberries and grapes and also added shortbread and lemon cookies which tasted AMAZING in the dip too!
Now, really this took all of 20 minutes to completely make the entire fruit tray and it looks fabulous. When we walked into the party I did get a few, "WOW, that looks amazing!" I will say, the kids were completely smitten with the strawberries and COOL WHIP dip. We had to hold them back and have a big discussion about, "double dipping." So, I call that a success!
